1. Jawar Upma- One of the easiest Millet recipes

Ingredients required- 1/2 Jawar grains, 1 carrot, 1 dry chilly, 1 onion,  1 tsp urad dal, ½ tsp grated ginger, 1 tsp mustard seeds, ¼ tsp asafoetida, ½ tsp red chilli powder and salt as per taste.

Method-

  1. Wash and soak the jawar for 6 hours.
  2. Put the jawar into the pressure cooker and add some salt and water.
  3. After two whistles, transfer the boiled jawar into the bowl after draining the excess water.
  4. Heat 2tsp oil in a pan and add dry red chili, urad dal and grated ginger. Saute them for a few minutes.
  5. Add chopped onion and chopped carrot, salt, red chili powder and let it cook for 2-3 minutes.
  6. Add the cooked jawar grains and cover with a lid. Let the U/pma cook for 5 minutes.
  7. Your Jowar Upma is now ready to be served.

2. Ragi Laddoo- Dessert from Millet

Ingredients required-  1 cup ragi flour, 1/2 cup powdered jaggery, 1/4 cup ghee and ½ teaspoon cardamom powder.

Method-

  1. Roast the ragi flour in a pan on low heat for 5-6 minutes.
  2. Then add ghee to the roasted flour and mix it well for 5 minutes.
  3. Now add 1/2 tsp of cardamom powder and jaggery powder and mix it well until all the lumps get dissolved.
  4. Once done, let the mixture cool down.
  5. Then oil your hands and make laddoos from the ragi mixture and the ragi laddoos are ready to be served.

3. Kodo Millet Porridge

Ingredients required- ½ cup kodo millet, 1 litre milk, ¼ cup powdered jaggery and 1 teaspoon ghee.

Method-

  1. In a pan, heat the ghee and roast Kodo millet for few minutes.
  2. Then add the milk in the pan and cook the millets for 10-12 minutes until millet grains turns glassy.
  3. After the porridge is completely cooked, add jaggery powder and stir it.

4. Millet Salad

If you are someone who is trying to lose weight, then this millet salad recipe is one of the easiest millet recipes that will be the perfect breakfast.

Ingredients required- Foxtail millets, Chickpeas, Vegetables, Fresh herbs, lemon juice, garlic, seasoning and olive oil.

Method-

  1. In a small jar, add olive oil, garlic, lemon juice, salt and black pepper and whisk it.
  2. Add cooked and cooled foxtail millets, boiled chickpeas and chopped vegetables into the large bowl.
  3. Drizzle the dressing of olive oil on the salad and mix it.

5. Ragi Soup

During winter, nothing can beat the feeling of warm soup and ragi soup is one of the healthiest and easiest millet recipes of soup.

Ingredients required- 1/2 cup ragi flour, finely chopped carrots and radish, fresh basil leaves and 2tsp ghee and spices like turmeric, salt and black pepper for the taste.

Method-

  1. Heat ghee in a pan and roast the ragi flour until you smell the aroma.
  2. Add pinch of turmeric, salt and 3 cups water to the flour and boil it.
  3. Then add chopped vegetables and let it cook for 7-8 minutes.
  4. Add black pepper and basil leaves and serve it hot.

6. Pearl Millet Khichadi

Pearl Millet (Bajra) is one of the staple and healthy diets that can be added to our winter dishes. Making pearl millet Khichadi is worth adding to the list of millet recipes.

Ingredients required- 300g pearl millet grains, 65g moong dal, finely chopped spinach, peeled and chopped potatoes, tomato and carrot, garlic, ghee, Chillies and spices

Method-

  1. Soak the millets overnight and wash moong dal.
  2. Heat the Ghee in a pressure cooker and add cumin seeds, garlic and chillies and saute them.
  3. Then add all the chopped vegetables and spices and mix them well.
  4. Add 4-5 cups of water to it and mix it well. Then lock the lid of the pressure cooker and cook for 3 whistles.
  5. Once khichadi gets completely cooked, serve it hot and garnish it with spinach leaves.
