This Spicy Bengali Mutton Curry aka Kosha Mangsho is a perfect lunch recipe that is loved by all. Velvety gravy texture with juicy pieces of meat which is eaten with maida luchi (pooris), full of flavors from the mutton, spices, and mustard oil, it doesn’t matter where you belong from, if you like Indian food this recipe will surely make you lick your fingers.
Dhokla – Gujarat: What began as breakfast in Gujarat, is now India’s most famous snack, and a big part of the popularity of Indian food. There is no Indian for sure who hasn’t eaten a Dhokla in his/her lifetime. Dhokla is a vegetarian dish made from fermented batter of rice and split chickpeas. It is usually served with tangy chutneys and can be eaten for breakfast, as the main course, as a side dish, or as a snack.
Rogan Josh – Jammu And Kashmir: Known for their unique spices and Kashmiri red chilies. Rogan Josh is Kashmir’s most famous and known dish. It is also one of the most famous Indian food served globally. Rogan Josh is an aromatic lamb dish with flavors of fried onions, various spices, and yogurt. It is usually served with steamed rice and consists of pieces of lamb or mutton cooked in a low-flame in gravy which is flavored with garlic, ginger, and aromatic spices (cloves, bay leaves, cardamom, and cinnamon).
Pongal – Tamil Nadu: Tamil Nadu has always been a place of comfort foods. If you want comfort food to beat the heat deliciously, Tamil Nadu is the place. Pongal is a rice and lentil dish that is often prepared in south Indian homes as an offering to the Goddess. But it is also eaten as comfort Indian food that is very easy to digest.
Papaya Khar – Assam: Covered in midst of bamboos and mountains, as well as the mighty Brahmaputra flowing. Assam is a beautiful place, and so is its culture and food. One such Indian food is Papaya Khar. Khar is a completely unusual recipe prepared out of the unusual combination of red rice, pulses, and raw papaya along with traditional Assamese spices. Khar (alkali) is synonymous with Assamese cuisine. Essentially, it is an exotic liquid strained from sun-dried banana skin and cooked with a seasonal vegetable like papaya(omita-as called in Assamese), water gourd (pani lau), or mustard greens (lai Haak).
Litti Chowkha – Bihar: One of the most famous dishes in Indian cuisine, Litti Chowka is an Indian food item that will leave one licking their plates clean, because of its unique and amazing taste. Litti Chowkha is baked from a wheat flour dough, which is stuffed with a mixture of roasted gram flour, spices, and lemon juice, and served with chokha (baked and pulped vegetables, mostly brinjal).
Dham – Himachal Pradesh: Known for the scenic beauty, Himachal Pradesh has a unique Indian food that people need to give attention to, called Dham. Dham is a dish prepared by cooking red kidney beans (rajma), green lentils (moong daal), and rice in curd. It is served teamed with mashed daal, boor ki Kari, and a sweet & sour sauce made from tamarind and jaggery (gur).
Pootharekulu – Andhra Pradesh: One of the most unique Indian food items on this list of Indian cuisine. The literal meaning of Pootharekulu has coated sheets of sugar preparation. They are made by making thin wrappers prepared from rice flour, ghee, and a good amount of powdered sugar.
Biryani – Telangana: More famously known as Hyderabadi Biryani, it is prepared in the form of “Dum Biryani”. This all-time classic needs no introduction. It is one of the most famous and known Indian food known globally.
Fish curry – Goa: Situated in the western part of India, Goa is known for its beauty and beaches, and for people who love Indian food a chance to have delicious seafood. With all that water, it is no surprise that the people of Goa love fish. Fish curry or as locals call it Xit Cody – meaning curry rice, is the delicious tangy flavored fish curry made with several special spices, served with steamed roti or rice.
Kafuli – Uttarakhand: Often called the Dev-Bhoomi, Uttarakhand is a paradise on earth. And one of the special Indian food of Uttarakhand is Kafuli. This thick curry dish is made using spinach, fenugreek leaves, garlic, ginger, green chilies, curd, rice paste, and several other spices. Kafuli is commonly eaten as a main dish and served with chapattis or steamed rice.
Chakhwi – Tripura: Situated in the northeast part of India, Tripura is a hill and jungle-covered beautiful state. The special Indian food of Tripura is Chakhwi. Made with bamboo shoots, green papaya, and a variety of lentils, Chakhwi is one of the most traditional and healthy preparations of Tripura cuisine. It is one of the unique recipes in Indian foods.
Kangshoi – Manipur: One of the traditional dishes of Manipur is Kangshoi. Kangshoi is a soupy textured stew made from seasonal vegetables, chopped onions or spring onion, dried or fried fish, and water.
Jadoh – Meghalaya: A state filled with pristine surroundings, lush green valleys, and astounding nature trails; Meghalaya is truly beautiful, it is a popular destination for tourists who come to visit the state and eventually fall in love with the uniqueness of the Indian food available here. And the people of Meghalaya love to eat Jadoh. Jadoh is prepared as red hill rice cooked with pork pieces. It is a Khasi version of Biryani and is hard to make, the dish is prepared with rice and meat. Being Khasi cuisine, it takes a lot of time and effort to make.
Appam – Kerela: Often called God’s own country, Kerela is a calm and relaxing place to visit. Appam is a type of pancake made with fermented rice batter and coconut milk. The origin of Appam is disputed between Sri Lanka and India. It is a common dish in Kerala, where it is eaten as breakfast or dinner.
Bhutte Ka Kees – Madhya Pradesh: Bhutte Ka Kees is an easy and delicious recipe that can be made for even tea breaks. This recipe is street food in Indore but is also made in many households very often. Easy to make and delicious to taste, this recipe is the special Indian food of Madhya Pradesh.
Dal Baati Churma – Rajasthan: Rajasthan doesn’t need any introduction as a state, covered in dessert on one side and beautiful architecture made from different types of stones on another side. Rajasthan is a popular tourist spot, with a lot of international tourists who eventually not only fall in love with the place but also with the amount of Indian food it offers on the palate. One such dish which people from all over India and the world come to taste is Dal Baati Churma. Dal Baati Churma is a traditional Rajasthani treat with spicy dal served with sweet churma along with deep-fried crunchy baatis (bread). It is a Rajasthani classic dish.
Bajre ki Khichdi – Haryana: Haryana is the highest producer of bajra(pearl millet), so it is no wonder it is a staple food item in Haryana and is special Indian food. Bajre ki Khichdi is a porridge (khichdi) made of coarsely crushed pearl millet and is served with pure ghee or sesame oil.
Thukpa – Arunachal Pradesh: Thukpa is a traditional dish of Arunachal Pradesh that is made by boiling noodles, filtered, and then mixed with vegetables and meat. It is now a full-time side dish included in famous Indian food.
Momo – Sikkim: Arguably, the most famous dish on this list of Indian foods. It is a famous snack that was first made in Tibet and now got all the Indian tadka in it with the addition of different spices. Momo is a type of South Asian dumpling, served with spicy sauces and sometimes even with soup/thukpa.

Chhena Poda – Odisha: Chhena Poda is a cheese dessert traditionally made in the Indian state of Odisha. Chhena Poda means Roasted Cheese in Odia. It is made of well-kneaded fresh cheese called chhena, sugar, and suji(semolina), and is baked for several hours until it gets its brown color. It is a sweet dish that the sweet tooths of Indian food lovers will love.
Chilla – Chhatisgarh: Another popular item on this list of Indian food. A chilla is a North-Indian crepe made out of chickpea flour. You can have your chilla with chutney or roll it and eat it.
Dhooska – Jharkhand: Dhooska or Dushka is a popular deep-fried snack eaten in Jharkhand. The main ingredients of the dhooska are powdered rice, chana dal (powdered), and sometimes boiled potatoes are also added to this savory dish. The bread is then deep-fried in oil. It is often served with any type of sauce or chutney.
Tunde Kei Kebabs – Uttar Pradesh: Due to its Awadh culture and history, Uttar Pradesh has a range of Indian food to offer from. One of which is the famous Lucknow’s Tunde Kei Kebab. It is a famous type of kebab which is made from minced meat and around 160 different spices. It is a part of Awadhi cuisine.

Yummy, all state food are tasty but i love and my favourite food in uttarakhnad food because they are delicious and tasty and kufali is thick curry dish is made using spinach, fenugreek leaves, garlic, ginger, green chilies, curd, rice paste, and several other spices.
